Recipes - what a concept!

I have a confession...I am not a good cook. Well, let me rephrase that: I am not good at gathering dinner ideas and putting together a weekly plan. This means that on most days, I'll just throw something together or use "box dinners" like hamburger helper/chicken helper. If it's not that, it's frozen pizza, dinners pre-put-together in a bag in the frozen section, or Stouffer's frozen lasagna. You get the idea.

That was until I wanted to do Weight Watcher's and my mom told me NO PROCESSED FOODS! I thought for sure we would all starve to death because I didn't know how on earth I was going to figure out how to ACTUALLY COOK! :o) Thankfully, my sweet mom went shopping with me on my first trip to the store as a reformed thinker. I now pick out items much differently. I do not get box dinners. And, as a side note, I read labels! We use the Weight Watcher's website for recipe ideas, and they are so yummy. In fact, last night we tried something new, and it was so good I sent the recipe to a few friends. Here's what we had:

Herbed Pork Loin Roast

  • 3 tbsp fresh sage, chopped
  • 2 tbsp parsley, chopped
  • 2 tbsp fresh oregano, chopped
  • 1 1/2 tbsp chives, minced
  • 1/2 tsp table salt
  • 1/2 tsp black pepper, freshly ground
  • 1 1/2 pound(s) lean pork loin, boneless roast, trimmed
  • 1/2 tsp olive oil
  • 1 spray(s) cooking spray
Preheat oven to 375. Combine first 6 ingredients in a small bowl. Rub pork roast with oil. Rub herb mixture over oil. Place pork roast on a broiler pan coated with cooking spray. Insert meat thermometer into thickest part of roast. Bake at 375°F for 1 hour and 5 minutes or until thermometer registers 160°. Let stand 10 minutes before slicing. Yield: 5 servings (serving size: about 3 ounces).

Caleb even said, "Daddy, this is the best dinner you've ever made!" So there ya go, approved by a 4-year-old!


Now don't get me wrong. As far as the weight loss goes, I've not been on track like I wish I was. We are eating much better overall, though, and I hope to get back on board with it. With these new recipes I'm finding, I'm excited to eat healthy. Who knew cooking could be so much fun! :o)

That is where the meetings really came into play. Having that once a week weigh in where you would write down your progress and get little star stickers for losing weight really made it fun. And talking to other people who where going through the same stuff, like when holidays would come around, really helped too. They say people who attend meetings lose up to 10% more than those who do it on their own. But I know you can do it! You are awesome...keep it up!

I lost 3 lbs last week and just 1 this week. The days home from school are making it hard!

I'm also trying to get better at cooking meals though our schedules are a little hectic. I'm a regular visitor of tastofhome.com. I usually pick a meat from the freezer and search t of h for a recipe. I can add recipes to my online recipe box and even select recipes to put on a shopping list. Then it prints out all the ingredients that I'll need for the meal/week/party. A GREAT resource! It's been a while since I made a pork loin- might have to try this recipe soon! Happy cooking!

Chrissy, you can do it...loosing a little at at time is better and you will keep it off..that is what you would be told at WW....so glad caleb liked the pork!
